You won’t believe how easy this recipe for apple turnovers is. It starts with homemade or pre-made pie crust so it literally takes just a few minutes to make a batch of these pastries.
You can have them ready for guests in no time at all. And it works well for breakfast, brunch, or dessert.
What is a turnover?
A turnover is a type of pastry that is made up of pastry dough filled with fresh fruit or pie filling. In some cases, the filling is savory rather than sweet.
Because the filling is baked inside the dough, they are the perfect on-the-go breakfast. Simply take one with you along with your coffee and you are all set.

For this recipe, we’re using pre-made pie dough and homemade filling and icing.
How do you make apple turnovers?
To make this recipe for apple turnovers, you will need to follow these basic steps:
Make the apple cranberry homemade pie filling and allow it to cool.
Make the pie crust and roll it out. Cut squares out of the dough, rerolling until all of the dough has been used. Once the pie filling is cooled, place a spoonful in each dough square.
Fold the turnover in half, crimp the edges, egg wash, and pierce the dough.
Bake until golden brown, cool completely, and drizzle with icing.
How do you store apple turnovers?
To keep these fresh for up to 5 days, place them in a container with a tightly fitting lid in the refrigerator.
Always place them in the back of the refrigerator where the temperature is the coldest for the best results.
Can you freeze apple turnovers?
Yes, you can freeze these either before or after they are baked. Simply place the unbaked pastries on a cookie sheet lined with parchment paper and freeze overnight.
Then, place them in a freezer bag until you want to bake them.
To bake them, place a frozen pastry on a cookie sheet and bake at 400F for 24 minutes.
To freeze them after they are baked, place them on a cookie sheet until frozen. Then, transfer them to a freezer bag. Enjoy them within two weeks.
To reheat, thaw them in the refrigerator overnight and enjoy. You can warm them briefly in the oven if you like.
Can I use pie filling?
Yes, you can. This recipe uses homemade apple filling for the apple turnovers.
But, if you want to save time, you can use premade apple pie filling.
Or, you can use another flavor of pie filling if you prefer. Blueberry, cherry, or peach would be delicious as well.

Ingredients
Apple Turnovers
- 1 Package Refrigerated pie dough 2 rounds or use dough recipe of choice
- 2 Cups Peeled and diced apples of choice We use Granny Smith or Honey Crisp
- 1 Cup Dried cranberries
- 3/4 Cup Light brown sugar packed
- 2 Tablespoons Butter
- 1 Tablespoon Flour
- 3/4 teaspoon Cinnamon
Egg Wash
- 1 Count Large egg whisked with 1 tsp water
Icing
- 1 Cup Powdered sugar
- 1/4 Cup Milk Alternatively use half & half
- 1/4 teaspoon Clear vanilla extract
Instructions
Apple Turnovers
- Preheat oven to 400°
- Line baking sheets with parchment paper
- On a floured surface, roll pie crust to approximately 1/8 inch thick, cut into squares approx. 4½ x 4½ inches. Repeat with second crust. Re-roll any leftover dough, place all squares onto parchment lined baking sheets.
- Place apples, cranberries, butter, and sugar into a saucepan and heat over medium heat until butter is melted. Add flour and cinnamon and simmer over low for 4 minutes stirring frequently. Remove from heat and cool completely
- Brush one side of each dough square with the egg wash
- Place 2 level Tablespoons of filling onto center of each square. Fold over to make a triangle and crimp edges with a fork. Make slits in the top for steam to escape. Lightly brush the tops of each turnover with the egg wash and sprinkle the tops with sugar
- Bake on center rack of the oven for approximately 20 min or until light golden brown
- Remove from oven, cool completely, then drizzle with icing
Icing
- Whisk powdered sugar, milk, and vanilla extract until smooth

Notes
- Don't skip adding the egg wash to your pastry. It helps to keep the dough moist so that it doesn't crack while you cook it.
- Be sure to crimp the edges tightly together so that the filling does not leak out of the seams.
- Line the cookie sheet with parchment paper to prevent them from sticking and to make cleanup easier.
- If you freeze these to bake later, do not allow them to thaw before baking. If you thaw it, the bottom crust will be soggy.
- Allow the turnovers to cool completely before you pipe on the icing. If you don't, the icing will melt and slide off the top.
