It’s not every weekend we get out the tent and go camping. So this weekend we had a fun backyard barbecue with some of our favorite camping foods!
Watermelon, s’mores, veggie foil packs, and deliciously grilled Hatfield Honey Garlic Teriyaki St. Louis Ribs to cap off our camp-food theme.
We’re also throwing in a few familiar camping-themed decor items to help nudge us towards our next camping trip.
It’s a fun way to celebrate summer when you can’t get to the campground.

BBQ Party Supplies
You can probably use whatever you might have kicking around the house, but here are a few ideas to get you started.
First, a simple way to put a rustic twist on anything is a roll of burlap ribbon.
I had a 6″ roll of burlap so I draped some across the table. It’s a simple way to add a little rustic touch to your table.

- Burlap ribbon
- Fun picnic platters
- Sparklers – I mean, you have to have sparklers, right!
- Mason jars or other containers for organization
- Container for s’mores making station
Camping Themed BBQ Party Food

You can cook them in hot coals around the campfire or right on your barbecue grill.
Today, of course, we’re grilling them! You can grill ribs in one hour, and they’ll come out perfectly juicy and delicious!

Easy Grilled Veggie Foil Packs
Ingredients
- Bell peppers; red, orange, green – cut into strips
- Zucchini, cut into rounds
- Summer squash cut into rounds
- Small red potatoes cut in half or quarters
- Italian dressing of choice
- Tinfoil, heavy duty, to create foil packs
- St. Louis Ribs
Directions
Grilling St. Louis Ribs
First, we’ll be getting our St. Louis Ribs grilling.
If they’re frozen, make sure to thaw them first.
Then we will assemble and cook the foil packs and everything finish at the same time.
- Preheat grill to 350 degrees F. and maintain this temperature throughout the cook

Place St. Louis Ribs on grill bone side down, grill for 35-45 minutes

Flip and grill meat side down for 15 minutes
- The internal temperature in the thickest meat should be 200-205 degrees F.
Grilled Vegetable Foil Packs
While the Hatfield® Marinated Pork Ribs get started on the grill we can cut our peppers into 1/2 inch strips and cut the zucchini, summer squash into 1/4 inch thick rounds, and small red potatoes in half or quarters depending on how big they are.
- Cut veggies and potatoes, toss in a bowl with 3/4 cup Italian dressing and mix well
- Cut tinfoil into four to six 18 inch long pieces
- Fill the center of the tinfoil with the veggies and potatoes, drizzle remaining dressing over each
- Fold and crimp tinfoil into secure packets, grilling with the seam at the top
- Grill for 25 to 30 minutes – place on the grill about thirty minutes into grilling the Hatfield® Marinated Pork Ribs
Everything should be done cooking at the same time. Cut the Hatfield® Marinated Pork Ribs between the bones, open up the foil packs and serve each foil pack as seen below!
Now it’s time to chow down, enjoy family or company and kick back as the weekend rolls on by.
