Pesto Zoodles with Cedar Plank Salmon
Cedar plank salmon over zucchini noodles is a delicious meal for the whole family. Best yet, it’s 5 ingredients!
Ingredients
- 3 large zucchinis cut into zoodles (get zucchini noodle cutter here)
- 2 6 ounce center-cut salmon (or any salmon fillet) skin off
- 6 stocks of asparagus, chopped
- 8 tsp pesto
- Lemon juice to taste
Zoodles Method
- Spiral cut or zoodle your zucchini into a colander
- Salt liberally and let stand 20 minutes (removes a lot of the moisture from the zucchini noodles)
- Rinse off salt and pat zoodles dry
- Spray fry pan with cooking spray; place zoodles and chopped asparagus into pan and fry over medium heat until tender (can be done right on the grill with a cast iron pan).
- Add pesto and stir gently.
- Top with cedar plank grilled salmon and enjoy!
