Chicken Taquitos

 

This chicken taquitos recipe will be a family favorite in your house as it is in ours.

We love serving cheese taquitos filled with chicken on a weeknight in. They’re easy to make and packed with flavor!

Chicken Taquitos Recipe

If you’re looking for a baked chicken taquitos recipe, this is it! This is the only one you’ll need.

You can easily adapt this recipe and add your favorite fillings, too!

Chicken taquitos recipe, easy baked in the oven or fried in oil, plated and served with sour cream and salsa.

Chicken Taquitos Recipe

As I said, you can make this recipe your own.

Simply swap out any ingredients you don’t like, or don’t have on hand, and add ingredients you do like, or do have in your pantry.

It’s real easy to do!

Ingredients

  • 1½ lb boneless, skinless chicken breasts
  • ½ tsp pepper
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 6 burrito-size flour tortillas
  • 1½ cups sweet corn kernels
  • 1½ cups shredded Monterey Jack cheese
  • 3 Tbsp EVOO
  • 1 (8-oz) tub sour cream
  • 1½ cups fresh salsa

Now that we have our ingredients, let’s put them together and bake these chicken taquitos in the oven!

Directions

Preheat the oven to 350 degrees F. Sprinkle the chicken with pepper, chili powder, and cumin and place in a lightly greased baking dish. (use butter for greasing the pan – yum!)

Bake 25 minutes or until the chicken is done (165 degrees F.)

Remove from oven, cool slightly, and shred it up into 1/2 inch shreds.

Turn the oven up to 425 degrees F.

Place the tortillas on a clean surface; top one-third of each tortilla with chicken, corn, and cheese.

Roll the tortillas up into tight cylinders and brush them with extra virgin olive oil (EVOO).

Baked Chicken Taquitos


Cook the tortillas, in the oven until golden brown and crisp; about 18 minutes.

Fried Chicken Taquitos


If you’d rather fry your chicken taquitos, you can cook them in batches in hot oil for 2-3 minutes or until golden brown, crispy, and the cheese is melted.

Then serve with sour cream and salsa!

Ingredients

  • 8 oz sour cream
  • 1 1/2 cups fresh salsa
  • 2 Tbsp butter for greasing pan

Instructions

  • Preheat oven to 350°F. Sprinkle chicken with pepper, chili powder, and cumin in a lightly greased baking dish. Bake 25 minutes or until done. Cool slightly; shred chicken.
  • Place tortillas on a clean surface; top one third of each tortilla with chicken, corn, and cheese. Roll up into tight cylinders, brush with EVOO.

Baked Chicken Taquitos

  • Bake in the oven until crisp and browned, about 18-20 minutes

Fried Chicken Taquitos

  • ALTERNATIVELY, rather than baking: Cook tortillas, in batches, in hot oil 2 to 3 minutes per side or until tortillas are browned and cheese is melted.
  • Serve with sour cream and salsa.

Notes

For this recipe, you can make the chicken ahead of time. That way all you need to do is prepare the taquitos! Better yet, these chicken taquitos are a great way to use up leftovers!
