Note: Because some people don’t like too much sugar, they’ve tried cutting the sugar in half and said yields great results.

I’ve yet to try using only 1/2 cup of sugar, but you can give it a shot if you’d like!

Additionally, you can use 1/2 cup confectioners sugar and 1/2 cup granulated sugar for a smoother cookie texture.

Directions

Firstly, mix all the ingredients together until smooth.

Secondly, roll the dough into 1.5 inch balls and place them on the prepared baking sheet.

Then, press them with a fork to make the criss-cross pattern you love in old fashioned peanut butter cookies.

Next, bake them in a preheated 350 degree F. oven for 8 to 10 minutes.

Once the edges have browned slightly, remove them from the oven and sprinkle them with more sugar.

Finally, cool for five minutes before moving them to a cooling rack.

  • 1 cup peanut butter
  • 1 cup sugar + sugar to sprinkle on top
  • 1 egg

Instructions

  • Preheat oven to 350°.
  • Prepare cookie sheet with parchment paper or cooking spray.
  • With your mixer, mix sugar, peanut butter, and egg in a medium bowl until smooth.
  • Roll cookie dough into 1½ balls and place on cookie sheet.
  • Flatten out each cookie and create a criss-cross pattern using a fork.
  • Bake for 9-10 minutes in preheated oven.
  • Remove from oven and sprinkle with sugar.
  • Cool cookies on baking sheet for 5 minutes, move to cooling rack with spatula.
  • Serve warm or cooled. Store in airtight container for several days.

    I love this recipe it is super easy and it tastes so wonderful one time mine got a little dry so I added just a little bit of room temperature butter like a tablespoon and it didn’t hurt it it just helped the dryness I had from the lack of something maybe the wrong size egg that day. But they were still so good.

    I made these with half the sugar but to give them enough substance, I replaced that with 1/4 cup almond flour which is also sweet. Delicious! I keep mine stored in the fridge.
