Ingredients

  • 3 lb baby carrots with tops cut lengthwise
  • 10 sprigs fresh thyme
  • 2 cloves garlic sliced thin
  • 3 tbs olive oil
  • 2 tbs honey

Instructions

  • Preheat oven to 450 degrees
  • Toss together carrots, thyme, garlic, oil, and honey in a bowl
  • Cover 2 rimmed baking sheets in foil, spread carrots in single layer
  • Bake 15 to 20 minutes or until carrots are beginning to brown and are tender
