Jalapeno poppers are everyone’s favorite. Mac and Cheese is also everyone’s favorite. So, why not have the best of both worlds? Spicy jalapeno popper mac and cheese Super Bowl appetizers! These fun, spicy, little bite-size piles of deliciousness are perfect for your watch party!

Whether your NFL team has made it to the championship or not, you’ve got to throw a party. I mean, even if you’re not interested in the game – the food can be the star of the show!

 

Super Bowl Appetizers

While the Patriots didn’t make it to the big game this year, we’re OK with that.

I mean, it’s become like a fourth winter holiday for us in New England… We have Thanksgiving, Christmas, New Year’s, and the Pats in the Super Bowl! (haha!)

All joking aside, we’re big game day foodies here and this year is no exception. These jalapeno popper mac and cheese bites are going to be perfect Super Bowl appetizers for everyone to chow down on while we watch the game.

Because you’re making them in a muffin tin, everyone will get their own individual portion, too!

How To Make Jalapeno Popper Mac and Cheese Appetizers

These might look complex, but they’re really not. If I can make them, so can you.

Basically, you’re going to cook the macaroni and the bacon Then cook the garlic in a bit of the bacon grease. Then you’ll add in the flour and cook, then add milk and cook – stirring until it’s nice and thick.

Then you’re adding in the cheese, peppers, and egg; finally adding in the pasta and bacon.

Once the stovetop cooking is done, you’re going to get them into the muffin tins and bake them in the oven.

Can You Make This Recipe Ahead of Time

You can put these together ahead of time and keep them in the refrigerator for up to two days. As you prepped it ahead of time, just pop it in the oven during the pre-game show. Everyone will love these cheesy, creamy, spicy jalapeno poppers mac and cheese muffin tin appetizers.

Because these are so delicious, you’ll be serving them every year on Super Bowl Sunday! They’ve got heat, they’ve got bacon, they’ve got cheese. I mean, c’mon!

Mac and Cheese Jalapeno Popper Appetizer Bites

Jalapeno popper macaroni and cheese appetizers

Ingredients

  • 1 16oz Elbow macaroni
  • 1 16oz Package of sliced bacon; chopped
  • 2 Cloves Garlic; minced --- 2 cloves = approx. 3tsp
  • 2 Tbsp All-purpose flour
  • 1 Cup Chicken broth
  • 1 Cup Milk
  • 1 8oz Block cream cheese; softened
  • 1 8oz Package of shredded Monterey Jack cheese
  • 3 Count Jalapeño peppers; seeded and minced
  • 1 Count Large egg, lightly beaten
  • 1 8oz Package shredded Cheddar cheese
  • 1 Count Green onion; chopped

Instructions

  • Preheat oven to 400°F.
  • Cook macaroni according to package directions.
  • Meanwhile, cook bacon in a skillet over medium heat until crisp; drain, reserving 2 Tbsp drippings in skillet.
  • Cook garlic in hot drippings for 30 seconds. Add flour; cook, stirring constantly for 2 minutes.
  • Gradually stir in broth and milk; cook, stirring often, until thickened and bubbly. Add cream cheese, stirring until melted. Stir in Monterey Jack, peppers, and egg until blended. Stir in pasta and half of bacon.
  • Spoon into 2 (12-cup) greased muffin pans. Bake 20 minutes or until edges are golden brown. Sprinkle with Cheddar, and bake 3 minutes longer or until cheese is melted.
  • Sprinkle with remaining bacon and optional green onion to taste. Cool in pans 15 minutes before serving.

Notes
