This Easter bunny carrot cake recipe is absolutely delicious.
What’s your favorite Easter candy? We love M&M’s of all kinds and recently found M&M’s Easter candies at Walmart.
We had to try them in our pumpkin carrot cake recipe and snazzed it up for Easter with a bunny cake pan, too!
Bunny Carrot Cake Recipe
Easter in our house is usually pretty laid back, as there are no children here so there usually aren’t any Easter baskets (sometimes though!).
However, we are only human, so we do splurge on Easter candy around Easter time.
And one of our favorite candies to have around Easter (and all the other holidays) are M&M’s.
In particular, we love Peanut M&M’s and Milk Chocolate M&M’s. And this year we found carrot cake M&M’s!
So, naturally, we had to try them out. And what better way to do so than include them in our pumpkin carrot cake recipe?
Can’t find the carrot cake variety? No worries, regular milk chocolate M&M’s will work too!
Easy Carrot Cake Recipe
Who loves cake? Yes. Everyone does.
But, who loves an easy-to-make pumpkin carrot cake with carrot cake M&M’s candies baked in and M&M’s Milk Chocolate used as decorations? Okay, everyone loves that too.
So, I’m going to show off my super simple Pumpkin Carrot Easter Bunny Cake Recipe right here on the blog!
Equipment needed
Easter Bunny Shaped Cake From Round Cakes
No bunny-shaped cake pan? That’s OK! You can make your own bunny shape.
Simply cook the cake in two round pans and cut one of the cakes to form the bunny shape!

How to Decorate a Bunny Cake for Easter
Of course, M&M’s are a favorite treat in every house, but it’s these seasonal flavors that really put the pep in our step.
Because who doesn’t love to try new flavors?!
The last time we used M&M’s in a recipe it was for our St. Patrick’s Day Cupcakes.
But today, we’re trying the carrot cake M&M’s flavor and adding them to our wicked easy Easter Bunny Carrot Cake Recipe!
Aside from the carrot cake M&M’s, we’re also using milk chocolate M&M’s and M&M’s Peanut – all of which are available in pastel colors for Easter!
Easter Bunny Cakes
To make this recipe super simple, we used a carrot cake mix and followed the instructions in our recipe below.
Then, we simply mixed in carrot cake M&M’s for added flavor and texture.
It’s a fun way to jazz up a boring boxed cake mix.
However, if you’re not a big fan of carrot cake mix, you can also use a spice cake mix.
Likewise, it’ll give you a big punch of flavor without the carrot pieces.
Since it does have a similar flavor, your bunny cake from the cake mix will be delicious and appeal to more people.
Don’t forget your Easter Bunny cake pan!
This recipe is so simple and easy to make, your two-year-old could do it with their eyes closed.
Okay, that’s not recommended. But you get the idea.
Easter Bunny Cake Mix Carrot Cake
Equipment
- Mixing bowl
- Bunny cake pan
Ingredients
- 1 15oz Can of Pumpkin
- 1 Box Carrot Cake Mix
- 2 10oz Bag M&M's Easter Candies
- 1 Small Bag M&M’s® Peanut
- 1 can Cream Cheese Frosting
- 1 tub Whipped topping thawed
- 1 Bunny Cake Pan or two round pans – cut second cake to make ears
Instructions
- Preheat oven to 350 degrees.
- Mix by hand Pumpkin and Spice Cake Mix.
- Add ½ cup M&M's Easter candies and mix.
- Pour mixture into greased (we use butter) cake pan.
- Bake at 350 degrees for 25 to 35 minutes (bunny pan is deeper than conventional pans which may take the full 35 minutes to bake).Cake is done when toothpick is inserted 1 inch from side and comes out clean don't – be fooled by melted M&M's®!
Frosting & Decoration
- Allow cake to cool completely, remove from pan.
- Fold whipped topping and cream cheese frosting until incorporated.
- Spread onto the sides of cake with spatula, use piping bag with large head to pipe poofies onto the bunny to make the appearance of fur.
- Add blue food coloring to a small amount of the frosting, pipe on whiskers with narrow pipe tools.
- Use M&M's to create the inside area of the bunny ears, and eyes. Use M&M's Peanut Easter candies for the nose and tongue.

Hi Caryl, thanks for stopping by! If you’re not a fan of pumpkin or spice cake, I would suggest adding the M&Ms Carrot Cake to a carrot cake mix to give it an extra punch of flavor. I don’t think they would change the taste of a yellow cake mix to carrot cake, they’re more of a fun, extra flavor boost 🙂
I don’t like pumpkin or spice cake. Can I use a regular yellow cake mix and add the carrot cake M&M’s and get a carrot cake taste?
Hi Sharon, thanks for stopping by!! 🙂 No eggs, oil or water. Simply a can of Pumpkin and a box of spice cake mix that you’d find in the baking aisle at your market! The pumpkin acts as the ‘wet’ ingredients. It’s a “two ingredient” cake, plus the M&Ms of course! Yes, great idea with the coconut, that would work nicely for the bunny fur as well! 🙂
Do you add the eggs,oil,water to mix and pumpkin?coconut sprinkled on cake would also look like fur without having to pipe icing
