I think this can be considered an “aha! moment”, creating a Paleo chicken BLT sandwich, using chicken as the bread! It’s genius, and tastes amazing. I know I love a great BLT sandwich, but I’ve never thought of using chicken rather than bread – that certainly takes this down to a low-carb sandwich as well!

Let’s face it, we all love bacon and we all love chicken. So, naturally this chicken bacon BLT is going to be our new go-to for weekend sandwich. It’s pretty easy to make, you just need to be sure to have your chicken baked ahead of time. Other than that, you can whip this sandwich up in just a few minutes — without the excessive carbs in the bread!

Ingredients

  • 8 slices bacon
  • 1/4 cup olive oil mayonnaise
  • 2 Tbsp chopped fresh basil
  • 4 cooked chicken breasts see note
  • 1 cup baby spinach
  • 2 large tomatoes cut into 8 slices

Instructions

  • Place 4 slices bacon on a paper towel-lined plate; microwave on High 11/2 to 2 minutes or until crisp. Repeat with remaining bacon.
  • Combine mayonnaise and basil.
  • Reheat chicken in microwave at HIGH 1 to 2 minutes or until heated.
  • Butterfly chicken breasts. Spread mayonnaise mixture evenly over cuts sides of chicken breasts. Layer spinach, sliced tomato and bacon inside of chicken breasts.

Notes

Prepare your chicken breasts. This can be done up to 2 days ahead of time. Pound the chicken down to 1/2-inch thickness. Don’t skip this step, it’s essential to ensuring the chicken cooks evenly and works as the 'bread'. Coat the chicken evenly with 1 Tbsp olive oil, 1/4 tsp salt, and 1/4 tsp pepper. Grill or sear chicken in a skillet 4 to 5 minutes per side or until done. Chill in refrigerator until ready for your sandwich, follow instructions.
