Peppermint Brownie Cookies Recipe
We only need a handful of ingredients to make these cookies. And that’s just how I like it. Simple, quick and delicious! So, let’s go ahead and make the brownie cookies.
Ingredients
- 1 box of Pillsbury Family Size Chocolate Fudge Brownie Mix
- 1/4 cup butter, melted
- 4 ounces of cream cheese (1/2 block), room temperature
- 1 egg
- 1 tsp peppermint extract
- M&Mâ„¢ White Peppermint Candies
First, Preheat the Oven
Preheat oven to 375 degrees. Then line your baking sheet with parchment paper.
Second, Mix the Ingredients
Mix the brownie mix, melted (and cooled) butter, softened cream cheese, egg and peppermint extract into a bowl. Then, mix it with a stiff spoon. Make sure to mix until all of the brownie mix powder is well combined.
At first, it wont seem to mix well. But keep going by using a folding a pressing technique—it’ll mix up great!
Third, Prepare the Cookies
Drop batter by the tablespoon full onto a parchment lined baking sheet. You’ll want them to be two inches apart.
Try to make the edges as round as possible so they have a nice round cookie shape. You can use a cookie scoop to assist if you have one! If not, don’t worry too much about it. They’ll come out just fine!
Lastly, Bake the Peppermint Brownie Cookies
Bake in the oven for 12-14 minutes.
Once baked, remove the cookies from the oven. Then, immediately place three M&M’sâ„¢White Peppermint candies on each. Press them into the cookies slightly.
Allow the cookies to cool down for 2 minutes on the baking sheet. Then move them to a cooling rack.
Repeat for the next batch. You will get 27-36 peppermint brownie cookies out of this recipe. Serve these cookies warm or cooled. They’re super fudgy and delicious peppermint brownie cookies and whether served warm or cooled, they’re fantastic!
