Peppermint Cheesecake Bites

The ultimate cookie cheesecake crust begins with only the best premium cookies from Pepperidge Farm. We’re using Pepperidge Farm Classic Collection for our cheesecake crust.

Cheesecake Cookie Crust

A simple cookie mixture will create the perfect crust for our cheesecake.

Pepperidge Farm Cookie Crust

Place the cookies in a zipper bag and roll with a rolling pin until finely crushed. Alternatively, use a food processor or knife to process the cookies.

Combine the crust ingredients – butter, brown sugar, flour and processed cookies with an electric hand mixer, pack the mixture into a 9×9 baking dish

Bake the cookie crust in the oven for about 11 minutes.

Cheesecake Filling

While the cookie crust is baking, we’ll prepare our cheesecake mixture! Combine cream cheese, egg, sugar, vanilla, peppermint and milk with a mixer.

Note: Beat the cream cheese and sugar together, then beat in the other ingredients.

Once the crust is done baking and the cheesecake filling is ready, you can pour the filling directly into the pan over the hot crust. Return the pan to the oven to finish baking.

When the cheesecake is done baking remove it from the oven and allow it to cool. I like to place my pan on a wire cooling rack. Once it’s cooled to room temperature, place the cheesecake in the refrigerator and allow it to chill for at least 1 hour.

Baked Peppermint Cheesecake

Before your guests arrive, remove the cheesecake from the refrigerator and cut into 2 inch squares, or better yet, use a circle cookie cutter. Top the peppermint cheesecake bites with chopped Pepperidge Farm Milano Candy Cane cookies and if you’d like, a drizzle of chocolate sauce.

  • 1/3 cup softened butter
  • 1/3 cup packed brown sugar
  • 1 cup flour
  • 1/2 cup crushed Pepperidge Farm® Classic Cookie Collection Cookies 1 of each cookie in the package


  • One 8oz package cream cheese room temperature
  • 1/4 cup sugar
  • 1 egg
  • 2 tbs milk
  • 1/2 tsp peppermint extract
  • Pepperidge Farm® Milano® Candy Cane Cookies chopped (for topping)


  • Preheat oven to 350 degrees
  • Prepare 9x9 baking pan with non-stick cooking spray


  • Beat softened butter and brown sugar in a large bowl with an electric mixer
  • Add flour and crushed Pepperidge Farm Cookies, beat until you have a coarse crumb mixture
  • Press mixture into prepared 9x9 baking pan and bake for 11 minutes


  • Cream sugar and cream cheese in a bowl
  • Add egg, milk and peppermint extract; beat until incorporated
  • Pour over hot crust and return to oven
  • Bake 25 minutes
  • Remove from oven, cool completely and then refrigerate until chilled
  • Once chilled, cut and top with coarsely chopped Pepperidge Farm® Milano® Candy Cane Cookies
