Step One

For the preparation of this dish, you need fresh and clean vegetables. Firstly, take a zucchini and wash it properly under running water. Cut it into thin circular pieces and keep it aside in a bowl.

Next, take 1 eggplant and thoroughly wash it under running water. Then cut it into thin slices and keep them aside. Take two tomatoes and slice them evenly for the dish.

When it comes to tomatoes, you must not pick the smaller ones. Instead, go for the red and juicy ones to bring fresh flavors to your dish. I recommend choosing the meaty tomatoes as they have the perfect red color and nice flavor, enhancing the dish’s overall taste.

After you have properly cut all the veggies, you are required to arrange them for cooking. So, take a casserole and grease it nicely with a layer of olive oil. The oil ensures that no vegetable slices stick to the utensil while cooking.

Then nicely arrange the vegetable slices into the casserole. I like adding a slice of zucchini, eggplant, and tomatoes. This way, I repeat the process till the casserole gets filled with veggies.

This step requires you to add flavors to your dish. Don’t worry, I have kept the flavors limited so you can recreate the same magic without any hassle.

Start by adding salt and pepper according to your taste. Along with it, you must also pour tomato sauce on the top. Then bake the veggies in an already heated oven at 180 C degrees. Let the veggies cook for about 40 minutes.

Before taking out the dish, poke a toothpick into one of the veggies to check whether or not it’s cooked. Once cooked, serve it with any of the side dishes of your choice.

  • The key to making delicious ratatouille depends on the freshness of the vegetables. Your dish will taste wonderful if you pick fresh veggies that look bright and colorful.
  • Try to slice the veggies in a similar manner so each slice can be evenly cooked. Uneven slices might not taste as delicious as you want them to.
  • When the dish is in the oven, you need to cover the casserole, so it doesn’t burn from the bottom.
  • For the side dish, you can serve it with thick slices of bread.

Do You Need To Peel Eggplant For Ratatouille?

It depends on you. If you want, peel the eggplant and dice them into small pieces. Or, if you want, you can leave the peel on and cut the eggplant into a thin circular shape. As far as zucchini is concerned, they are better unpeeled.

Why Is My Ratatouille Watery?

Even after correct preparation, the ratatouille can turn watery. It mainly happens when you use a small pan for cooking, and the heat is not spread evenly. To avoid this issue, you must use a deep and large pan so the veggies can be properly cooked.

What Can I Use As A Substitute For Eggplant?

For the eggplant substitute, you can use zucchini as it blends well with the flavors of ratatouille.
