How to Make Roasted Red Potatoes
One of the reasons that I love this recipe is that the potatoes end up nice and crispy with an unbelievable flavor. I can’t tell you how many times I get asked to make this recipe.

- Tinfoil to cover the pan during the roasting time
Instructions
Just follow these simple steps to get the best crispy fried potatoes.
Wash and completely dry your potatoes. Oil your casserole dish.
Cut your potatoes in pieces that are about the same size.
Toss them in olive oil and season them.
Cover the dish with foil and bake at 400F for one hour.
That’s all there is. It really is so easy to make this recipe and it’s absolutely delicious.
If you want to make this for a larger group of people, you can get one of the large disposable aluminum pans and double or even triple the recipe. Just be sure they get evenly cooked while roasting.
What are the best potatoes for roasting?
One of the reasons that I love making roasted red potatoes is that the skin turns crispy so easily. Because the skin is thin and the potato is relatively low in starch, it is one of the best choices for roasting. It’s unlikely to fall apart when you cook it.
If you are all out of this variety, you can try using Yukon golds instead. The flavor won’t be exactly the same. But, they should still come out nice and crispy if you follow my tips.
Should I peel the potatoes first?
No, there is no need to peel these before you cook them. The skins contain lots of vitamins and nutrients so you should really eat them.
To clean your potatoes, use a vegetable scrubber and gently scrub them under warm running water. Then, dry the potatoes completely before you roast them.
Damp skins won’t get crispy when you cook them.
Best Seasonings for Potatoes
When you make these roasted red potatoes, you can use a variety of different types of seasonings. When I made it, I used salt, black pepper, and a few sprigs of fresh rosemary.
But, if you want to change up the seasonings a bit, you can certainly do that. Why not try a combination of chili powder and cumin if you enjoy spicy foods.
Or, for something a little bit different, you can add garlic, or Italian seasonings like basil and oregano. Change it up each time you make it and see which one is your favorite.
How can I store roasted red peppers leftovers?
Simply place them in a container with a tightly fitting lid. Then, store them in the refrigerator for 3 to 5 days.
To reheat, place them back under the broiler for 5 to 10 minutes. Check regularly and turn as needed.
Can I freeze roasted red potatoes?
Yes, if you want to freeze your leftovers you can. Just place them in an airtight freezer bag for up to 6 months. I find it easiest to freeze them in individual serving sizes. That way I can take out just what I need.
They may not be as crispy when you reheat them. But, they will still be delicious.

Ingredients
- 10 count Red Potatoes
- 3 sprigs Rosemary
- 1 tsp Salt
- 1/4 tsp Pepper
- 1 Tbsp Olive Oil
Instructions
- Preheat oven to 400 degrees.
- Oil a 9×13 casserole dish. Slice potatoes into wedges. Toss in the olive oil.
- Season with salt, pepper, and 2 sprigs of rosemary.
- Cover with foil and bake for 1 hour; remove the foil the last 10 minutes for browning.
- Garnish with the last sprig of fresh rosemary and serve.
