When fall or winter hits, we all love a nice bowl of soup. Combined with your favorite ronini pasta noodles, spinach, smoked sausage, and cannellini beans — you’ll surely warm up quick!
Smoked Sausage and Spinach White Bean Noodle Soup
Ingredients
- 14 oz. smoked sausage
- 8 cups vegetable broth
- 3 cloves of garlic, minced
- ½ medium onion, diced
- 4 tbsp olive oil, divided
- 1 can cannellini beans, undrained
- 2 cups rotini pasta
- 2 cups spinach, roughly chopped
- ¼ tsp salt
- ½ tsp pepper
- 1 tsp oregano
- 1 tsp thyme
Directions
- In a skillet, heat 2 tbsp olive oil over medium heat.
- Chop smoked sausage into ½-1 inch slices.
- Cook over medium heat, 6-7 minutes, stirring frequently, until cooked through and beginning to crisp on all sides. Set aside.
- In a large soup pot, heat remaining 2 tbsp olive oil over medium heat. Add chopped onions and minced garlic and cook for 2-3 minutes, until onion is turning translucent.
- Pour in vegetable broth, and add cannellini beans. Bring to a boil.
- Add in pasta, sausage, and seasonings. Boil for 5-7 minutes, until pasta is just al dente.
- Add spinach and cook 1-2 minutes more.
- Serve hot.
