Sweet potato casserole has been a classic dish in my family. The rich, creamy texture and nutty flavors of walnut make it a perfect side dish. But is this dish sweet enough to be enjoyed as dessert? 

My grandmother has always served delicious sweet potato casserole during holidays, along with the roasted turkey. You can enjoy it with any of the side dishes that you like. Or you can eat it alone because it’s not too sweet.

Step One:

To prepare a delicious sweet potato casserole, you need around four sweet potatoes. Make sure you only choose the ones that don’t have any holes. You can bake the potatoes or boil them to get the deep flavors. 

Boiling sweet potatoes can be time-consuming. So, what you can do is properly peel and wash them under running water. Then cut the sweet potatoes into cubes and then boil them. This way, you can speed up the boiling process. 

After the potatoes are boiled, turn off the heat, drain the water, and transfer the boiled potatoes into a different bowl.

Step Two:

The actual process of making baked potato casserole starts by mashing the boiled sweet potatoes.

Take another bowl in which you need to add vanilla extract, butter, brown sugar, mashed sweet potato, whole milk, and eggs. Mix all the ingredients until properly combined. After mixing, you must transfer the mixture into a greased casserole.

Step Three:

You need another bowl in which you can mix flour and brown sugar. Take a handful of chopped walnuts and butter. Mix everything till it forms a crumbly consistency, and put it on the top of the casserole.

Put the casserole dish in an oven and let it bake for 25 minutes. Serve hot and enjoy.

Key Notes:

  • If your sweet potato batter has turned out to be runny, you must add one more egg because it acts as a binder in the casserole. Before adding the eggs, ensure the sweet potato mash is at room temperature. 
  • If you like marshmallows, you can add them on top of the casserole. Put miniature marshmallows on a cooked casserole and then bake it for a few more minutes. 
  • Before adding walnuts, you can toast them to bring out nice nutty flavors. After toasting, chop into small pieces and add them to your casserole. 

Can you prepare this dish in advance?

Yes, you can prepare this dish in advance. You must prepare the toppings and filling separately. Avoid baking anything. 

You can transfer the ingredients in a container to put inside the fridge. Before serving, take out the toppings and filling. Then, transfer them to a greased casserole pan and bake for some time. Serve hot and enjoy. 

How to store sweet potato casserole?

If you have leftover sweet potato casserole or have prepared it in a large batch, keep it in an airtight container in the fridge. Your sweet potato casserole can stay fresh for up to five days. 

How to reheat sweet potato casserole?

You can reheat sweet potato casserole by covering the dish with foil. Bake it in the oven and take the dish out after 25 minutes. 

Can sweet potato casserole be freezed?

Yes, you can do it without adding the topping. Cool the casserole, wrap foil paper, and put it inside the freezer, where it can stay fresh for 3 months.

Ingredients

  • 4 sweet potatoes, cooked
  • 2 large eggs
  • 1/2 cup whole milk
  • 1 teaspoon vanilla extract
  • 4 tablespoons butter
  • 1/4 cup brown sugar

For the crumbs:

  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup walnuts
  • 4 tablespoons butter

Instructions

  • First, mash the sweet potatoes through a fine mesh sieve and place them in a large mixing bowl.
  • Then, stir the eggs, whole milk, vanilla extract, butter, and brown sugar.
  • Mix until combined and transfer the mixture to a casserole dish well greased with butter.
  • In another bowl, mix the flour with the brown sugar, chopped walnuts, and butter into a crumbly mixture and top the casserole.
  • Bake in an already heated oven at 350 F or 180 C degrees for about 25 minutes.
  • Serve and enjoy
