2½ cupsconfectioners' sugarsifted
1cupcreamy peanut butterSkippy works best
½tsppure vanilla extractimitation works, but pure is best
¼tsptable saltalternatively, use Kosher salt
6tbspsalted buttermelted
8 ouncesmilk chocolate chips
1tbspvegetable shortening
Instructions
Line a baking sheet with parchment paper. Beat the confectioners' sugar, peanut butter, butter, vanilla, and salt with an electric mixer in a bowl until combined. The mixture will be a little crumbly. Scoop 2 mounded teaspoon fulls, and roll into balls; arrange them on the parchment. Refrigerate for about 20 minutes (or freeze for 10 minutes) until firm.
Add chocolate chips and shortening to a microwave safe bowl and microwave on high in 30-second increments, stirring in between, until the mixture is completely melted and smooth; about 2 minutes.
Stick a toothpick or skewer into the peanut butter ball. Dip the ball with a rolling or swirling action into the melted chocolate, leaving a circle of peanut butter visible on the top. Allow the excess chocolate drip off, then place the buckeye back on the parchment. Repeat with the remaining peanut butter balls and chocolate.
Smooth out the hole left by the toothpick with your fingers. Chill the buckeyes in the refrigerator until they are firm; about 30 minutes. Serve at room temperature or cold. Refrigerate in an airtight container for up to 5 days.
