Beer Cupcakes with Irish Cream Frosting

Irish Cream Frosting

butter
softened

cream cheese

Irish Cream Liqueur
Non-alcohol: use milk

Instructions
Beer Cupcakes
Preheat oven to 350 degrees F.; line 24 muffin cups with cupcake liners
Combine sugar, beer, butter, and cocoa powder in a medium saucepan. Cook over medium heat, stirring, until butter is melted.
In a separate large bowl, combine eggs and sour cream; beat at medium speed with a mixer until smooth.
Gradually add chocolate mixture, beating until combined.
In a small bowl, stir together flour and baking soda; gradually add to chocolate mixture, beating until smooth.
Spoon batter into the cupcake tin
Bake for 15-20 minutes or until toothpick inserted in the center of cupcakes comes out clean
Allow to cool for 10 minutes, remove from pan and cool completely on a wire rack
Irish Cream Frosting
In a large bowl, beat butter and cream cheese at medium speed until creamy
Add Irish cream (or milk) and beat until smooth
Gradually add and beat in confectioners' sugar until the frosting is smooth and reached your desired consistency
Spread or pipe onto the cooled cupcakes
Top with chocolate coin and sugar sprinkles
