A quick and easy chicken taco soup loaded with vegetables, beans, and chicken sausage that is ready in less than 30 minutes!

Ingredients
1packageal fresco Taco Night Mild Mexican Style Chicken Sausage(one package, both links) sliced into medallions
2tbspcorn oil
1smallvidalia onion (yellow onion)
1smallred bell pepperchopped
1smallgreen bell pepperchopped
115oz canblack beans
114.5oz canstewed tomatoes
110oz cantomatoes and green chiles
115.25oz cansweet corn
18oz cantomato sauce
1tbsptaco seasoning
114ozchicken broth
1tspsalt and pepper to taste
choice of toppings, sour cream, guacamole, cheese, tortilla chips etc...
Instructions
Heat oil in a large pot over medium heat. Add peppers, onion, a pinch of salt and pepper and saute for 5 minutes.
Add chicken sausage, beans, corn, stewed tomatoes, tomatoes and green chiles, and chicken broth. Bring to a simmer and cook for 15 minutes
Season with salt and pepper and serve with choice of toppings
