Ingredients
Frozen Tater Tots
Hatfield Savory Brown Sugar St. Louis Ribs
1 rack for tater tots, 1 rack for finger food
Hatfield Classic Hardwood Smoked Bacon
Pico de Gallo
Mexican Cheese - shredded
Optional: BBQ Sauce
Instructions
Cook Hatfield Savory Brown Sugar St. Louis Ribs according to the package instructions; once cooked, add BBQ sauce if you wish.
Cook your bacon according to the package
Meanwhile, remove the rib meat from the bones. Keep a few nice ribs aside as garnish
Chop the bacon up once it's cooked
Cook tater tots in the oven according to the package instructions
Once the tater tots are baked, turn on the broiler
Keep the tots on the sheet pan and top them with chopped ribs, chopped bacon, and Mexican cheese blend.
Pop them under the broiler for about 2 minutes or until the cheese is melted
Using a spatula, pick up and stack the loaded rib totchos into serving dishes
Serve!
Notes
Tip: While baking the tater tots, open the oven a couple of times throughout the cook to steam - thus helping the crispiness!
