Mexican Street Corn Easy Recipe
An easy recipe for Mexican street corn with just a few ingredients.

Ingredients
Corn oil
4
ears
Corn, husked
1/4
cup
Mayonnaise mixed with 1 tbs homemade taco rub

Salsa
1/4
cup
Spicy cheese crumbled (Mexican or pepper jack)
Instructions
Prepare grill for medium-high (400 degrees or so) oil grates
Lightly brush corn with oil
Grill with the lid closed until tender and charred, rotating the corn every 5 minutes or so - 20-30 minutes
Spread each ear with 1 tablespoon of the mayo-rub mixture and 1 tablespoon of salsa, sprinkle with cheese
