Ingredients
1 1/2lbsboneless, skinless chicken breasts
1/2tsppepper
1tspchili powder
1tspground cumin
6countburrito-size flour tortillas
1 1/2cupssweet corn
1 1/2 cupsshredded Monterey Jack cheese
3Tbspextra virgin olive oil (EVOO)
8ozsour cream
1 1/2 cupsfresh salsa
2Tbspbutterfor greasing pan
Instructions
Preheat oven to 350°F. Sprinkle chicken with pepper, chili powder, and cumin in a lightly greased baking dish. Bake 25 minutes or until done. Cool slightly; shred chicken.
Place tortillas on a clean surface; top one third of each tortilla with chicken, corn, and cheese. Roll up into tight cylinders, brush with EVOO.
Baked Chicken Taquitos
Bake in the oven until crisp and browned, about 18-20 minutes
Fried Chicken Taquitos
ALTERNATIVELY, rather than baking: Cook tortillas, in batches, in hot oil 2 to 3 minutes per side or until tortillas are browned and cheese is melted.
Serve with sour cream and salsa.

For this recipe, you can make the chicken ahead of time. That way all you need to do is prepare the taquitos! Better yet, these chicken taquitos are a great way to use up leftovers!
