Zucchini is probably one of the most versatile vegetables and my absolute favorite. Honestly, I didn’t quite like this vegetable earlier. But ever since I have tried this delicious salad, I couldn’t get enough of zucchini. What’s better is that you can do several things with this vegetable. 

In my version of zucchini salad, I enjoy eating this raw vegetable. The taste and texture of raw zucchini hit differently, leaving me craving for more. The flavors of this vegetable are not too overpowering. Besides, it mixes with the spices and gives out a blast of flavors. 

This crunchy salad makes the right addition to any picnic, parties, and potlucks. You can serve the salad with grilled sandwiches, chicken breast, soup, or any other dish. Trust me on this; the delicious taste of this salad will blow your guests. 

If you do not like zucchini, you must try this salad. I think you might love it! 

Fresh and Crunchy Zucchini Salad 

Zucchini salad is a true feast for eyes and taste buds. I truly love this dish’s spiral and thinly sliced zucchini tastes. Oh, and did I mention? This salad has 10 ingredients and can be prepared in just a few minutes. So, now you don’t have to spend all your time in the kitchen preparing something different for your guests. 

I have seen many variations of this salad where people add a couple of extra ingredients. I don’t need to add more ingredients as it suppresses the taste of the fresh zucchini. 

You must try this salad if you like to make inventive and flavorful food in just a few minutes. Just like me, you will also fall in love with this salad and would want to prepare it now and then.

Steps to Prepare Delicious Zucchini Salad

Below is a step-by-step guide that you can follow to replicate the same zucchini salad that I prepare at my home. 

Step One 

Make sure you have fresh and large zucchini before preparing this simple salad. Small zucchini will also work, but the larger ones are watery, making the salad tastier. 

Properly clean the zucchini under running water. Then use a sharp knife or vegetable peeler to cut the vegetable into thin slices. You can slice the zucchini vertically or spirally. I personally prefer spiral cut as it makes the salad look delicious. 

After the zucchini, you need to clean the cherry tomatoes. Properly clean the tomato so dirt can be removed. Then slice the tomatoes in half. If you want, you can eliminate the step of cutting cherry tomatoes and keep them full size. 

At last, you can move towards onions. Pick the red onions as they are more flavourful. Nicely peel and wash one onion under tap water. You can cut the onions in bite-sized shapes, but I prefer dicing them.

Step Two

Through this step, I will teach you how to make the perfect zucchini salad dressing. You would need two tablespoons of fresh mint, nicely washed and diced. In addition, you can take two tablespoons of fresh parsley, chopped. 

Take a large mixing bowl and add two tablespoons of vegetable oil. In addition, you can add two tablespoons of apple cider vinegar, salt, and pepper. Add freshly chopped mint and parsley to complete the dressing. 

The next step is properly combining the dressing with chopped onion, cherry tomatoes, and spiralized zucchini. You can also enhance the taste of the salad by adding 3 oz crumbled feta cheese. Mix properly and serve with any side dish of your choice.

Key Notes:

  • If you want to add a nutty flavor to your zucchini salad, you can add roasted pine nuts for crunch. The rich and nutty flavors of the pine nuts will make your salad taste a bit more delicious. 
  • You can give a zesty taste to your spiralized zucchini by drizzling lemon vinaigrette on the top. Fresh lemon juice is a substitute for lemon vinaigrette, which also helps bring out the same flavors. 
  • You can add a rich and enhancing ingredient, sumac, as it is rich in antioxidants. This ingredient also decreases muscle pain and inflammation. 
  • Another great add-on is shredded chicken, which will add protein to your salad. Also, shredded chicken enhances the taste. 

Can You Eat Zucchini Salad Every Day?

There is no harm in eating zucchini salad every day. But sometimes, you might encounter bitter zucchinis, which might not be a pleasing experience. So, you must properly check the zucchini before adding them to your salad.

  • 1 zucchini, spiralized
  • 1 cup cherry tomatoes
  • 1 red onion, diced
  • 3 oz feta cheese

  • 2 tablespoons vegetable oil

  • In a bowl, place the spiralized zucchini, cherry tomatoes, red onion, feta cheese, fresh mint, parsley, salt and pepper to taste, vegetable oil, and vinegar.
  • Mix until everything is combined and serve to enjoy.

Notes

Two tablespoons of oil are enough to coat the salad, but you can add more to get a thicker coat and shine.
